cuisine for the rich

Sunday, April 29, 2007
They are very cautious to their diet. Rich eh!

Breakfast: One apple, one sliced bread with butter and jam, freshly squeezed orange juice, natural yogurt, tea with milk for madame, coffee for sir.Thats breakfast.

In Phils: fried rice , dried fish, fried egg, tomatoes, coffee

Lunchtime:For Madame : a glass of fresh juices (a combination of: one each of carrot, fennel, celery, apple ,orange.) I put it in a machine, that seperate the fibers and produces only juices.

Shredded carrots, sliced tomatoes, sliced artichoke, red pepper, lettuce, cucumber, red radish ; I do not mixed them on serving plate.I serve it seperately in a plate. They picked what they like.

Sauce of balsamic, olive oil, sugar and salt vegetal (mixed).

Bottled Tuna on olive oil.Sometimes, just thin sliced ham.
Water Mineral.
Tea.

They dont drink coca cola.Et oui, diet, you see...
In Philippines: as long as there is rice, its a good meal.

Dinner: Vegetable soup from fresh vegetables of leeks, potatoes, celery carrots. Or nothing. They go to bed, no dinner. Shock!!!!

In my country,DINNER must always with rice.

If they want to eat shrimps, it has to be served unshelled, take off the black vein.

If I serve fish, no bones, no scales. If whole fish (bar ot dorade) I would serve only the meat. I must take off all bones and headin front of them.Arrange nicely on plate with a decor of one brocolli or sliced lemon
Thats first class. Ala Five star restaurant.

If chicken menu,fillet only,no bones,no skin.
If they desires beef or pork, fillet only and no fats.Please...
They dont use mayonnaise at home.
Frying oil must be vegetal, non fat.
Saute veges only with non fat butter.
Milk for cereals must be fresh milk.
Milk for tea or coffee, it must be soya milk.
Maybe they dont have anti bodies?
Thats why, LOL

If pasta noddles, put salt and olive oil and it must be aldente, not too soft.

If mashed potatoes, just steam it,no boiling, and when cooked, peel it all, and served to them whole, they mashed it themselves on their plate and eat it with butter. I dont served it mashed , it is not a good presentation.

Service de table must be in good presentation.Silver cutlery with linen table napkins! So you could imagine my laundry everyday, consists of stained linen table cloth, table napkins, and must iron it with starch product to make it nicely done.

Thats why, thanks for the invention of anti stain for clothes before washing all to the machine.Work life of Francesca becomes easy.Hehe.

Thats cooking and service de table for the rich.Thats how they eat.

At home, I once tried the same with Lolo(hubby).I took out my best Gerrman cutleries, fine linen table set cloth and napkins, tall wine glasses. Nice presentation on the table with all the trimmings with the not needed "what nots"!

Ngek! Lolo was not impressed. He prefered to concentrate on the menu below.

Hmmp!
He is not rich, you see. Yet.

Those were the "butler days"

Friday, April 27, 2007
Today, Butler was sooo annoyed. The Boss told him to buy his medicines to a pharmacy but bring his old medicines to have it exchanged. Butler went to the pharmacy but the manager said, the medicine is a special one,by order at pharmacy, cost 76€ (5000pesos) per box and its very rare that someone would ask for it.

The manager proposed that if the Boss wanted it reimbursed soon, he had to wait if someone ordered it then they can reimburse the amount.

Butler went back to the Boss, Boss said, no! You go there again, and tell them, I am a regular customer. So Butler went back again, second time.

After second, third, fourth return to the pharmacie, the manager said: Okey we will refund it, good we have a client that ordered it today.

When the manager looked into the box, he found the box of medicine with the security seal broken. So Manager said: "We cannot have it refunded, seal is broken.Sorry."

Butler was soo annoyed. He had a lot of things to do in the house! His garden still unwatered, the garage is dirty, two cars (aston martin and bmw)needs to be clean, his carrots he left boiling,in the pan, and he told me to look after it, I just answered: "Oh, Ill see, but dont count on it..." Haha. Muntik na masunog!

Butler for the sixth time, reported it to the Boss: No refund Monsiuer, sorry. What did the Boss said this time?

"Put a tape, maybe they will accept it now..?"

Gusto sabunutan ni Butler Boss namin, lol!

Butler was thinking of paying the Boss of the amount, para matapos na, Lol! He asked me what to do!

I said: I would tell the truth. I dont pay. Its the Boss 's problem, he deal with it.Period.
Pero takot Butler...haha

My Hiring experience

Wednesday, April 18, 2007
If I look for employment in France, I put my self to ads.

I prefer to work inside the house.Ayoko mag shop attendant,(Mcdo or malls, restaurants) mahina pa french speaking and comprehension ko, besides minimum salary lang sila mostly, nasa 8.27€ per hour, 8hours work.Full declare or experience lang habol ng iba, thats why they take it even minimum.

Also I always try my luck to "rich and generous" employers in Monaco .
Ambisyosa noh?

Eto ang ads ko (sa newspaper) if I look for work sa house :

Jeune Femme Phil, experience,sérieuse, avec references , cherche emploi de ménage, repassage, garde d'enfants, cuisine, nuit bebe sitting. tel: ------

In English:(pero di ko to nilalagay sa ads, double bayad kasi sa newspaper ads,if with translations eh, hihi.)

Young lady Phil, search employment cleaning, ironing, looking after children, cooking, night baby sitting, experienced, with references, serious. Tel:----

Four days ads, I would pay 24€ , two days after, lalabas na sa news ads.

Calls coming. Of course, basta Filipina, mabili, kasi our culture and attitude na makabahay(domesticated) and pasensyosa with laging nakangiti.
Minsan, direct call from employers, minsan naman from secretaries.

Sa phone muna ang business dealings:
ilang oras?ilang araw? from what time to what time?, where in Monaco?

Pag may best offer na:

"When is the appointment to see you, Sir / Madame?"
Can I have your phone number, in case I cant find your place?

Minsan naman, nasa Sydney Australia pa pala tumatawag, darating in two weeks sa Monaco, mama mia!

Some would ask for resumé. Ayaw mag pa appointment agad agad ,(mga bruha, haha) sosyal, hmmp!Padala ko raw biodata by fax or email. So ipadala, mahirap ba yun?

Ganito CV ko: TIPS eto girls, take note nyo ha?

Note: I dont put my age nor birthday sa cv.Manigas sila. If interesado sila sa akin, they can ask me by person, lol But usually, they would ask via phone, kaya sinasabi ko na rin, buti bata pa raw ako, lol!

Basta origin Philippines ako, laban na CV ko against Portuguese, Italians, even French applicants, lol

If okey CV ko, saka nila ako tatawagan for appointment. Sa bahay nila, to meet both Madame and Sir, minsan sa sala nila, naka wine drinks sila.
Kakaasiwa!

If ako nag present ng sarili ko for meeting them, naka office attire ako. Kelangan looking: "kapanipaniwala na seryus baga kuno ako lol"!Ay oo, first impression counts, meaning,if naka presentable attire? Madame, 3000€ per month salary ako!
(Joke lang)

Interview day, do not wear jeans and rubber shoes. Sa males naman, if Butler or family driver/gardener ang inaaplayan, dapat naka coat and tie. Ay oo, Madame kaharap ko... They would assess me from top to toe kung saang Mt Timbukto galing ang lahi ko.

Then naka folder na mga kapapelan like:French resident card, certificate of work, SSS. Photocopy lahat. Kasi kukunin nila yun.Ipapasa yun sa Labor employment for permit to work in Monaco certificate.

If approved ako sa "taste" nila, they would roam me around the house. Meaning, I got the rights to see the areas. If not, byebye exit ako bahay nila , and they would tell me: "we will call you.... dont call us."
Pero ano ka, di ka tatawagan, lol
7 out of ten employers' interview ako di nahire. Usually, mahal daw fees ko.
Hmmp, barat! Hanap sila ng mura! Taga Romania,or Bulgaria! lol!

Ba, payslip na yun in a month, hehe.

Before leaving them, they would tell you straight if hired by: giving you the key of the house, car if driver. Ganun ka bilis. Ganun ako sa work ko with Butler. May susi ka kaagad. Meaning:
You're Hired.

And my mountain of responsibilities starts with those keys...huhu!

Cheap low class housemaid

Sunday, April 15, 2007
Sa Pilipinas, pag sinabi na katulong ka, its the lowest job a human being can do.
In Europe where the rich can afford to pay the hefty salaries,Working as a house employee is a professional trade. But of course, depends on how one looks at it.One can be a katulong, and stay as katulong (cleaners only) and one can go up to next level. Of being a professional Butler, PA,governant, maitre.

Why is it called a profession?

Because the work is for those who have brains to please the rich employers who have noble styles of living.
The work includes dealing with VIP guests and make their stay comfortable. Also one must know proper communications.
In short, one must have a brain. Housemaid work lang po yan .

A filipina was not allowed by her husband to work as "house employee".The work daw is of a lowest kind/ class . Even they need money badly, he cant take it, she will work as "katulong".
Pride? Or ignorance? Or dahilan na lang? We never know.
Mind you, its normal of them to think that way.
Who wants to be called a low class cleaner? lol

But it makes me wonder: what if his wife earns 3000€ a month as a "cheap low class housemaid"to a noble rich in France, with best social security and benefits in the world, will her frenchman says no to the work?
Some secretaries would take "that work" and "that salary",if they are experienced, lol.

What if this filipina sends (100,000 pesos) to her family in Philippines, monthly to feed ten brothers and sisters and buying them a decent place to live, will her frenchman still says no to the work?

I will take the work as a challenge .It will be a useful experience to work with the noble rich and learn from them. And I did. Seven years of "tasting" how it is to live with the rich, and it was a great experience for me, from living in Mt. Timbukto to another world.Plus the "good money" coming into my pocket.

"There's no silly work, only silly people."
Dont you think?

Panalo ako!

Thursday, April 12, 2007
Daig ko pa ang nanalo sa Lotto. I think.
If you remember, tampo Madame ko dahil I took another employer, yung nga, back to Butler ako. To make the story short, these matampuhing afternoon employers told me to quit my work. Eh yoko. Then they would persecute me, yun bang hindi ka babatiin. Instead, pasok pa rin ako, and do as they wish in life: I gave them filipinas to replace me.

Eto na, today, secretary told me: "You fortunate little thing, what did you do to deserve a salary increase???!!"
Gulat ako. Sabi ko: "Quoi?" (What?)
"Our Boss told me to reaarange your work contract and starting April, you will have an increase of 1€ per hour!Thats 130 € per month!"
Kwenta ko bigla sa pesos, aba eh, 9,000+ pesos din yun!

Aba, hindi na masama. So isip ako, why biglang increase salary ko, eh hindi naman Pasko? Or di pa naman nag bigay new laws ang Monaco for salary increase???And I didnt ask them any salary increase! Tatanggalin na nga raw ako as they always said:
>Find us a new one,you have to go, quit your work!<
Pero hindi ako umalis, kasi if alis ako voluntarily, wala ako indemnity pay of two months. Contract dureé indetermineé (CDI)ako sa kanila meaning, long term contract.

If I put my "pride:glory me-glory me-attitude" on the situation, ganito: Baka takot sina Madame aalis na ako, kasi panay padala ko sa secretary ng replacements ko, then I could quit!
Or, nadala sa lutong Pinoy, Spicy adobo chicken, ginataang alimasag with curry and bagoong at beef or shrimp sinigang!

One euro increase per hour, yeheey ! ! !!
Mabibili ko na palasyo ng Monaco , haha!
As usual, walang uutang, hehe...

Eto naman tsika ni Butler today. Merong sobre (sulat) si Boss mula sa Inspection de Travail Office of Monaco. Sagot ko: " et alors? (eh ano ngayun if meron)?"
Butler said: "Pag ganung sulat, maaring nag reklamo si Italian sa Monaco Employment Service sa pagkatigok sa kanya sa work dito."
"Butler, tsismoso ka lang. Our Boss is correct sa Monaco SSS. Declared lahat ng oras natin dito, so its not that what you think! Our Boss is a billionaire, he will not get into that type of stupidity, sacking people and dont pay indemnities. Besides, he gave two months salary as indemnity to the Italian lady.Ano ka..!

Baka daw si Italian wants more!
Ganun?"

Nag resign na ako, after a year, rehired ako.

Buking kami!

Of course, di niya na get. Bakla at panget lang alam non , plus
"tang galog",
"madagang gabi"
at "paalang!"

Tsikaa!

Wednesday, April 11, 2007
Si Lorraine, anak ko sa Pinas, nagtatampo. Ganda ganda raw ng suot lagi nina anjo and marghie dito sa France, samantalang siya, wala man lang bago. So nag rerequest sa akin: sagutin ko naman daw pang hongkong disneyland niya this May, may promo daw ang Cebu Pacific. Or else, mag bibigti daw siya!Nasa webcam kaming tatlo while discussing with her...

Margie: "Eh papanget ka non, pag namatay ka. Dafat beauty pa rin!"

(You see, girls, inaasar pa rin namin si Lorraine, hehe).

Yoko mag commit agad pero I gave her some tips...

"Anak,go to Cebu Pacific office, ask mo total price, kasi may airport and travel and fuel tax pa yan and ek eks besides 205$ na package tour. Ask mo muna sa cebu pacific ,ano immigration rules baka book ka dyan, binili mo na ticket, di ka naman pala makalipad, aba eh, no refund pa naman yan if bayad na!"

Today, she send me a Yahoo message...: "Ngeh ma, yung 205$package tour nila, wala pa pala plane ticket yun, hotel with breakfast and entrance ticket lang pala yun sa disneyland!Alangan namang languyin ko na lang papuntang Hongkong!"

See,Ligtas ako sa gastos, hehehehe...
Kaya???Abangan. Maghahanap daw siya ng mura...

Good news. Mama mia.

Anjo decides, reformat pc na.Yun after four hours, na balik sa normal speed laptop ni Pinoy,Get rid of the annoying higk risk virus, naka 50€ si anjo.

Today, I told Butler, aba, appointment agad laptop PC niya this Saturday to Anjo.
Ayun inatake ng "herpes and aids" pc niya.

Secrets of Butler, and iba pa

Saturday, April 07, 2007
When he told me to keep on watch if our Boss comes back, I thought, what joke is he playing at, this goonie? The Boss daw kasi told him how to blanch the tomatoes for pasta sauce. Eh two kilos must be peeled. So, blanch ang tawag don, babalatan ang tomatoes.
Pano turo ba ng Boss?
Ilagay daw sa sink, patuluan ng very hot water from the tap, and leave it for few minutes. Ganun daw gawa ni Butler for a year now, since wala ako, and he still got hard time to peel it!I can imagine, lol

So I told Butler: Boil water in a pan, and if its boiling na, dip all tomatoes, then one minute passed, take it out, put in cold water in the sink, in three minutes, your tomatoes are nicely peeled, because the hot and cold reacted to the skin! Easy!

Eh yung celery daw? Two kilos, tatadtarin niya ng pino, kelan siya matatapos non?
"Buang, Panget",sabi ko, "take the blender, put all the stalks(leaves excluded) and run the blender, yun! Get it?"

Sabi niya, Merci beaucoup, Amy, bigyan kita Panettone
sa Easter, mula Italy!
Nagbigay nga ,bit bit ko today!Waaah!

Mga happenings this week:
1.April 2, Memorial of Christ's Death, its a one hour mass 7:30pm before sundown (Based in the Bible and Jewish Calendar Nissan 14.We, Jehovah's Witnesses , friends and families who attended ,celebrated Christ's Death,(refer to Luke 22:7-19) one hour mass, like wala kami palaspas, walang imaheng iiyakan, walang parada ng mga nag lalatigo ng katawan,or nag papako sa krus, walang vigil, wala rin panaghoy buong semana santa or pagbabawal kumain ng karne.
Ganito lang kami, dressed presentably for the event, partake the Last Supper commemoration, then go home.Or some would stay to have dinner together.Ganun lang ka simple.

Sabi ni Jesus Christ: "Do this in Memory of me..."Last Supper niya ang i gayahin, not yung pag papako, because he did it for us na.

During the mass, wala picture taking, but after the mass, pwesto na, lol!Margie and Anjo , ganda at guapo..!

2.April 3, We recieved a package from Yves and Mikkie of Toulouse, France!Dyan sa Toulouse ginagawa ang . A380 Airbus
800+ Pasengers planes! Yves is an engineer, and wife Mikkie is a native of Cebu. We recieved five huge packets of dried mangoes, yum, yum yum and two bottles of San Miguel beer from them.
Sabi ni Lolo, "at last someone remembers me."
Explained ni Yves:" because at this time, Michel is a minority daw in our house, 1 against 3, so he cant win,oo nga naman, haha!"
Yves sent him beers to cheer him up! Ty, Mikkie and Yves, you're always the best!

3.April 7, cheska from US
is presently in Paris, practicing Bonjour and Merci with the locals, and she called me today to say hello and : How's Butler!! How nice! She mentioned she cant come to Monaco, out of iterinary daw. Di bale,Ches, there will always be time for that! Butler is Ok, I ll pass your hello, lol!
Ches, enjoy Paris, while Awful, eheste Eiffel
,
tower is still standing, lol
Pag daw wala ka photo sa Eiffel as background, you never been daw in Paris!
Basta, blog mo travel mo ha? We will wait for that!
